Crustless Mini-Quiches

Given that we are often a bit rushed in the morning, we are limited in our breakfast choices. Today's kitchen experiment is intended to provide us with some yummy and quick hot breakfasts this week.

I kept it simple and just used things I already had on hand in the frig.
The egg mixture had milk, sweet picante peppers, some red pepper/artichoke tapenade from PCC deli, milk, fresh basil, TJ's grilling seasoning blend and salt and pepper.

I put cheese (cheddar and mozzarella) in a layer in the bottom of the muffin tins to form a base.
Filled them most of the way with the egg mixture (I used 8 eggs for 12 quiches).
They puffed up quite a bit in the oven (about 15 minutes, 425 degrees).

And they tasted great! Had a little sneak preview tonight and we'll try them out as breakfast in the morning.

Easter Eggs

No hard-boiled eggs around here today, but I did whip some up with milk, cheese, oregano and red pepper flakes to pour over the stale bread and make a cheat souffle. Yum.

Huevos Rancheros, re-worked

Today during yoga when I was supposed to be focusing on my breathing, I was dreaming of brunch. My dreams involved a big plate of huevos rancheros, Sunlight style -- spicy enchilada sauce, chewy cheddar cheese, creamy black beans . . . delicious. But the sad, wilting red peppers in my vegetable drawer called out to me, telling me that if I were simply to give them a little massage with olive oil and put them in a nice warm oven, they would be happy to make me a delicious enchilada sauce that would serve me for this meal and many more.

During my walk home, the roasted yams and sweet potatoes I made yesterday spoke up. "We'd be such a sweet contrast to a spicy sauce, don't you think?" While reaching for the peppers I saw the hunk of red cabbage which had yet to be roasted, so I grabbed it too, thinking I'd just chop it up and roast it for a later meal. After the onions and peppers came out of the oven and joined the tomatoes, garlic and onions on the stovetop, the cabbage went for a turn on the cookie tray. But as it roasted, it filled the kitchen with a smell so sweet I really thought it could have been cookies in the oven. So, the can of black beans went back on the shelf to make room for the sweet cabbage on the plate.All in all, a very satisfying meal, and one that will actually allow me to head out into the garden now instead of putting me in a food coma like the restaurant bruch would have. Though I might have to go have seconds first . . .

Cold-Buster

Today's lunch was a combination comfort food/medicinal meal, as I have been under the weather for over a week. I'm hoping the copious garlic and jalepeno in this dish is enough to burn away this chest cold and let me breathe (fire). Let's just hope it doesn't burn out my stomach, too.
The beans: canned black beans with a clove of raw garlic, heated just through. The sauce: cumin, smoked paprika, 6 cloves (or so) and a jalepeno brought to life in a couple tablespoons of olive oil, then cooked into diced tomatoes (canned) and pureed (left chunky) with the immersion blender. Two over easy eggs cooked with more garlic and jalepeno, two sprouted grain corn tortillas and a little cilantro. Stand back, germs!

And from a couple of weeks ago, a super healthy corn/bean/quinoa stew with carrots, celery, spinach, tomato and similar spices to the heuvos, but in moderation. This one was excellent on its own and re-heated with some tamales, then later as a soup with tomato soup to thin it out.
